Soil Type

Granite and marl-limestone.
Gramite is a hard, mineral-rich rock that warms quickly and retains its heat, and it contains 40 to 60 per cent quartz and 30 to 40 per cent potassium feldspar, plus mica or hornblende, and various other minerals.

Marl-limestone is clay-rich limestone that has a similar effect to marl–a cold, calcareous clay-like soil (usually 50 per cent clay content) that delays ripening and adds acidity to wine.

Tasting Profile

Cocoa dust with hints of cherry on the finish. If you're not fond of the natural musk apparent upon opening, I suggest letting this sit open in your fridge (place cork in it, of course), overnight for up to 24 hours and you'll find it is more expressive of fruit notes. On Day 2, there are more sour cherry forward notes, slight lingonberry, brick minerality, and almond skins on the finish.

Food Pairing

Seafood and leafy salads with fruity dressing, mole chicken with mild spice, Pernil, roasted sweet potatoes and beets with sea salt, Greek yogurt, and balsamic viniagrette.
